Also, in honor of the Auburn LSU game this Saturday, Roger ‘The Rebel Chef’ shares a boudin casserole that can be eaten before, during or after the game. Roger The Rebel Chef’s Boudin Brunch Casserole
6 eggs, lightly beaten
2 2/3 cups Heavy cream
1/8 tsp red pepper
1 TBL Brown Sugar
2 LBS boudin sausage crumbled and sautéed
¼ tsp paprika
8 slices Texas toast white bread , crust removed
1 TBL dried minced onion
2 cups cheddar (mild)
½ tsp dry mustard
½ tsp salt
½ tsp Worcestershire sauce
Mix all ingredients except sausage, Bread, and Cheese. Butter a 3 quart casserole and layer bread, sausage, and 1 ½ cups cheese in dish. Cover with liquid mixture. Top with the remaining cheese. Refrigerate over nite. Take out 2 hours prior to cooking. Cook 1 hour at 350 degrees. Let casserole site 20 minutes before serving. Serves 8.
